Yes, you can freeze onions! You don’t even need to blanch them or pre-treat them in any way. It’s super easy! Simply peel, chop (diced or sliced) and freeze.
But why bother freezing them when onions store well for weeks? It’s true, properly cured onions do store well – but only if you have the right conditions. If you store onions too hot, too cold or too humid, you’re onions are either going to sprout, go moldy or go soft. That’s when freezing or dehydrating are good options.
Freezing Onions Is a Time Saver
If you cook regularly, you know that 90% of recipes include chopped, diced or sliced onions. For me, having a bag of frozen sliced and diced onions is a convenient time saver. Instead of chopping and slicing an onion every time I prepare dinner, I simply go to the freezer and pull out what I need. No daily chopping required.
Consider freezing onions if…
– you don’t have a proper storage place for them
– you hate having to chop fresh onions every time you make dinner
– you enjoy the convenience of pre-cut food and the satisfaction and low price of doing it yourself

Flavor Changes of Frozen Onions
Like any unblanched vegetable, the flavor of frozen onions will change over time. The longer they stay in the freezer, the stronger their flavor will become. For that reason, I only freeze about five pounds of onions, or however many onions I can use within a two month period.
Of course, the texture of onions will also change. Frozen onions work well in any cooked dish, but not for any recipe that requires fresh, crisp, raw onions .
How to Freeze Onions
Chop onions to your preferred size – sliced or diced. Use a knife, mandolin or food processor (slicing tool for slices or blade for diced). For a big batch like this, I pulled out my food processor and also used a pair of latex gloves to prevent onion hands!
Place them in a freezer bag, remove as much air as possible and place in freezer.
They will freeze into one big lump, so just place a thin layer in the bag and lay it flat when freezing. This way, you can simply break off a piece at a time as needed.
