Gather your favourite mulling spices, bakers' string and some cheesecloth. I used allspice berries, dried orange peel, whole cloves, whole green cardamom pods, cinnamon sticks, candied/crystallized ginger, black peppercorns and star anise. Of course, you can use whatever you have available or whatever flavours you prefer.

Instructions
Assemble your sachets
Cut 5"x5" or 6"x6" squares of double layered cheesecloth.
On each square add your favourite spice combination.
Bring the four corners of the cheesecloth square together and tie with bakers' string.
Place sachets in an airtight container, decorate and label.
Cooking Directions
Pour 1 quart (1 litre) of cider, pure apple juice, cranberry juice or a bottle of red wine into a large pot.
Add one sachet of mulling spices and simmer (not boil) on stove for 15 minutes.
Reduce heat to its lowest setting to keep warm.
