Ingredients
1medium-sized pomelopeeled and segmented
1cupcucumberthinly sliced
1/2cupcarrotsjulienned
1/4cupsliced shallotsor red onions
1/4cupfresh chopped cilantroor mint
1/2cupchopped, roasted peanutsor cashews
1Tbspfish sauce*
2Tbsplime juice
1Tbspsoy sauce
1Tbspolive oil
1Tbspbrown sugaror honey
1clovegarlicminced
1/2tspfinely chopped red chilior more!
Instructions
In a large bowl, combine pomelo segments, sliced cucumber, julienned carrots, shallots, cilantro and chopped peanuts.
In a small bowl, whisk together fish sauce, lime juice, soy sauce, oil, brown sugar, minced garlic, and chopped chili (if using).
Pour the dressing over the salad ingredients and toss everything together until well combined.
Serve garnished with extra cilantro and peanuts if desired. Store extras in fridge and enjoy the next day.

Notes
Fish Sauce Substitute: use extra soy sauce or tamari (gluten free soy sauce), Worcestershire sauce or oyster sauce. Start with small amount of substitute, taste, adding more as needed.
