Ingredients
3/4cupall-purpose flour
3/4cupwhole wheat flour
¼cupground flax seed
1tspcinnamon
2Tbspbrown sugar
1Tbspbaking powder
1/2tspsalt
2eggs
1 1/2cupsmilk
2Tbspcanola oil
1 1/2teaspoonvanilla
5-6applesGranny Smith, Ambrosia, Gala
Instructions
In large bowl, stir together dry ingredients.
In separate bowl, whisk together eggs, milk, oil and vanilla. Pour into dry ingredients and stir just until moistened.
Wash apples. If using apple peeling/slicing machine, core and slice apples into rounds. Peeling is optional. Or use an apple corer to remove core from center of apple then cut apples into 1/4 inch thin slices horizontally to form circles.
Dip apple slices (4 to 5 at a time) into batter. Use a fork to lift apples out allowing some of the batter to drip off so center holes do not fill with batter. Place rings on hot, lightly greased griddle or fry pan.
When the top side starts to look dry, flip and cook the other side until golden.
