A classic, easy to make mandarin orange spinach salad. Of course, you can also try it with strawberries and almond slices in the spring, blueberries and peaches in the summer or apples and dried cranberries in the fall.
Make vinaigrette by pouring all ingredients in a screw top jar and shaking vigorously.
Toss spinach with vinaigrette (you may not need all the vinaigrette, store extra in the fridge for a week).
Arrange mandarin oranges, pecans, feta and pomegranate seeds on top.
