Ingredients
1large applediced small
2celery stalksdiced small
2cupsdiced cooked chicken
1/4cupdried cranberries
1/4cupwalnutsoptional
1/2cupplain Greek yogurt
1/2cupmayonnaise
1Tbsplemon juice
salt & pepper to taste
2Tbspparsleychopped
Instructions
In salad bowl, toss apples, celery, chicken, dried cranberries and nuts.
In separate bowl, mix remainder ingredients well.
Toss dressing with apples and chicken. Garnish with parsley.
Serve on a bed of lettuce, on bread, in a tortilla wrap, on bagels or in pita pockets.
