Grilling asparagus on the BBQ gives asparagus a toasted (or charred if you like) crispy outside and a tender, not mushy inside. For the best aspargus - grill sliced lemons next to it for an irresitible finishing touch.
Cut woody ends off each asparagus spear, wash and pat dry. Dry well so oil will stick and to prevent steaming.
Coat asparagus evenly with oil and season with salt and pepper.
Place asparagus directly on grill, or on a grill pan (provides more control of charring, especially for thin spears) making sure to leave space between each spear.
Grill for 2-5 minutes per side depending on how thick (see info in article), charred and tender you'd like them. Look for a change in colour and char marks forming. A little charring=flavour, black all over=mistake! Turn down the heat or keep lid open if charring too quickly. Use the fork test or, pick up a spear with tongs. It should bend but not be floppy. If it's rigid, give it a little more time.
Remove from oven and drizzle with lemon juice or your favourite toppings (see article). Serve immediately.
Optional: Grilled Lemon Slices - cut lemon into 1/4 to 1/2 inch thick slices, brush both sides with oil, place on lightly greased grill, grill for 1-2 minutes per side to get char marks and heat lemon through. The heat breaks down pectin for easy flowing juice, removes any bitterness and leaves a hint of sweetness to lemons. Serve next to grilled asparagus.
