Super easy steps to making the most flavourful and spicy hot pepper flakes and cayenne pepper. Use store bought or homegrown cayenne peppers (or whatever peppers you prefer). Peppers must be thoroughly dry.

1 grinder or blender

20dried cayenne peppers
Instructions
Take green cap off dried peppers.
Place peppers in spice grinder or blender and blend for 1 minute or more until you have some powder with some remaining flakes. CAUTION- open lid away from your face and be prepared to sneeze!
Pour into a sieve over a bowl and shake to separate into powder and flakes.
Use a funnel to pour into two separate containers, one for flakes and one for powder.
Store in dark, dry cupboard for one year for maximum flavour. Will be safe to use indefinitely.

Note: Processing hot peppers will cause hot pepper dust in the air and may lead to sneezing and tears! Always hold top of grinder away from your face when opening. And, if you're sensitive to the heat, wear latex gloves.Approximate Measures: Every pepper is different, so the estimate of 20 peppers for 1 oz or 2 Tablespoons of powder is a very rough estimate.
