Ingredients
1bundlefresh asparagus (1lb or 454 g)
1Tbspoil
1tspsalt
1/2 tspblack pepper
1Tbsplemon zest
2Tbspfresh grated Parmesan or nutritional yeast
pinchhot pepper flakes (optional)
Instructions
Preheat oven to 400°F/204°C.
Cut woody ends off each asparagus spear, wash and pat dry. Drying is important so oil will stick and spears will roast not steam.
Coat asparagus evenly with oil and season with salt and pepper.
Lay out on baking sheet being sure to leave space around each spear so it will bake not steam.
Roast for 8 to 12 minutes depending on size of asparagus spears. Look for a change in colour and use a fork to pierce the thickest part of a spear. The fork should slide in with just a little resistance. Start checking at 8 minutes or less if using really thin spears.
Remove from oven and sprinkle with lemon zest, Parmesan cheese and hot pepper flakes or your favourite toppings. Serve right away.
