Choose the oldest eggs you have for easy peeling.
Place in single layer and cover with water so there's about ½ to 1 inch of water above eggs.
Bring to full rolling boil. Immediately turn off heat.
Cover and let rest for 10-12 minutes for perfect hard cooked eggs or 4-6 minutes for soft cooked eggs. Set a timer!
Immediately, put eggs in an ice bath for 2-3 minutes.
Crack each shell once to let a little water seep in between the shell and egg to make peeling easy.
Gently crack the shell all around into MANY tiny pieces, just don’t pierce the egg white.
Gently but firmly roll the egg on a counter with your palm. Don't squish the egg, just make a thousand tiny cracks all around the egg. You’ll begin to feel the shell separating from the egg white.
Start peeling where the air sac is. Get under the thin membrane and use it to peel back the tiny pieces of shell. For more help, peel under running water so the water runs between the shell and egg
