A simple vinaigrette made with fresh chives, lemon zest and lemon juice. Perfect for a light and refreshing green salad.

Ingredients
1/3cupcanola oil
2Tbsplemon juice
1tsplemon zest
1Tbsphoney
1/2TbspDijon mustard
1Tbspfresh chiveschopped
salt & pepper to taste
Instructions
In a jam jar, add all ingredients.
Screw lid on jar and shake vigorously to combine ingredients.
Taste and adjust seasoning.
Drizzle over salad greens.
Keep vinaigrette in refrigerator for up to 5 days.
Notes
We mixed some of this vinaigrette into plain white rice - wowsers, it was fantastic! I can imagine this over steamed veggies or roasted potatoes too. Yield 1/2 cup
