Grilled Zucchini with Italian Seasoning
This grilled zucchini with Italian Seasoning is one of our favorite ways to eat the endless supply of zucchini coming from the garden. Of course the chocolate zucchini loaf and lemon berry zucchini muffins continue to be family favorites. The fanciest zucchini recipe is this Zucchini Ribbon Salad, but these grilled zucchini slices with Italian Seasoning are one of the quickest easiest ways to enjoy zucchini.

Have you tried grilled zucchini? It’s so quick and easy, the only thing that could possibly go wrong is overcooking it. It just takes two minutes on each side to get perfect zucchini that’s tender in the middle yet still firm on the outside, less if you slice them thinner.
In this particular recipe I chose to baste the zucchini in canola oil, but you could use melted butter, coconut oil or even bacon drippings.
You can also change up the seasoning or add a sprinkle of lemon juice, Parmesan cheese, hot pepper, cilantro or parsley. It’s your kitchen, get creative and remember recipes like this are just inspiration to get you started.

Grilled Zucchini with Italian Seasoning
Instructions
- Preheat grill to medium high.
- Wash and slice zucchini in 1.5 cm (1/2 inch) slices. Do not peel.
- Brush zucchini slices with oil.
- Sprinkle seasoning on each side of zucchini slice.
- Place zucchini on grill leaving a little space between slices.
- Grill for 2 minutes, flip and grill other side for 2 minutes.
- Remove from grill and enjoy!
