Apple and Beet Salad – A stunning no lettuce salad
This apple and beet salad is one of our favorite ways to enjoy beets. It also works well with frozen beets so we can enjoy it all year long.

It’s a stunning, colorful salad that would make an excellent addition to any pot luck, picnic or dinner.
Recipe for Apple and Beet Salad
Apple and Beet Salad
Ingredients
Salad
- 3-4 beets
- 2 apples, mixed varieties
- 2-3 tbsp feta
- 2-3 tbsp walnuts (optional)
- 1 tbsp fresh dill
Vinaigrette
- 1/3 cup canola oil
- 2 tbsp red wine vinegar
- 1 tbsp Dijon mustard
- 1 tbsp honey
- 1 clove garlic, minced
- salt and pepper to taste
- 1 tsp caraway seed, optional
Instructions
- Wash beets and cook in boiling, salted water until tender or roast in oven.
- Cool, peel and dice beets into bite sized pieces.
- Wash, core and dice apples. Do NOT peel.
- Toss beets, apples and dill in serving bowl.
- If using, add walnuts and cheese.
- Whisk together vinaigrette ingredients or place all ingredients in a small jam jar and shake til combined.
- Mix vinaigrette with beets and apples.
- Serve and enjoy. Will store in fridge for 3 days.

Apple and Beet Salad Celebrates Seasonal Food
We make this salad all year round. But my all time favorite time to make it is the end of summer when we get to use garden beets, fresh dill and hand-picked apples. So good! I especially love how the peel of the apple seems to glow when the white of the apples gets colored by the beets. So good!
Can You Use Roasted Beets?
Yes, you can absolutely use roasted beets for this salad. Prepare the beets however you prefer.
