Ingredients

  • 2 cups diced cucumber
  • 2 cups diced tomatoes
  • 2 Tbsp fresh chopped mint 2 tsp dried
  • ½ tsp salt or to taste
  • Freshly ground black pepper

Dressing

  • 2 Tbsp olive oil
  • 1 Tbsp lemon juice

Instructions

  • In medium serving bowl, combine cucumber, tomatoes and mint.
  • Season with salt and pepper and toss gently to combine.
  • Drizzle with olive oil and lemon juice and mix gently to combine.
