Luscious Lime Bars

Have you tried luscious lime bars? They are indeed the same as luscious lemon bars except using limes instead of lemons. Limes are just a little more tart/sour than lemons – so these are extra puckery good. Note – I’m not a fan of anything too sweet – so my version of luscious lime bars is not overly sweet – you definitely get that lime flavour coming through.

You are going to love, love, love these sweet and tart lime bars.  A creamy lime filling on top of a buttery pastry crust. Need I say more?

Probably one of my favorite dessert squares and it always surprises me how easy they are to make. The base is like a buttery shortbread cookie. The top is like a luscious smooth, creamy lime pudding with a dusting of powdered sugar.

Luscious Lime Bars

Not too sweet, not too tart – these bars are a lime lovers delight!
Prep : 25 minutes
Cook : 20 minutes
Total Time: 45 minutes

Ingredients

  • 3 Tbsp sugar
  • 1 cup all purpose flour
  • 1/2 cup butter
  • 2 large eggs
  • 2/3 cup sugar
  • 2 Tbsp flour
  • 1/4 tsp baking powder
  • 2 tsp lime zest 1 lime
  • 3 Tbsp fresh lime juice 1 to 2 limes
  • 1 Tbsp icing or powdered sugar

Instructions

  • Preheat oven to 350°F.
  • In medium size bowl mix 3 Tbsp sugar and flour. Cut in butter until mixture is crumbly. Press crumbs firmly and evenly into bottom of an 8×8 inch square pan.
  • Bake for 15 to 17 minutes until just starting to brown.
  • To prepare lime filling, beat together eggs, 2/3 cup sugar, 2 Tbsp flour, 1/4 tsp baking powder, lime zest and lime juice.
  • Pour filling over baked pastry layer.
  • Bake for 20 minutes or until lightly golden around edges and center is set.
  • Cool completely on a wire rack.
  • Cut into 16-20 squares/bars.
  • Sift powdered sugar over top of bars and garnish with extra lime zest.

Notes

Try switching the lime for lemon or even blood oranges!
No need for green food coloring – the bits of green zest and the incredible flavor speak for itself.
