Avocado Sauce with Lime and Cilantro – Vegan

This avocado sauce is fantastic on fajitas, nachos, quesadillas, tacos and Southwestern style salads or grain bowls. It also doubles as a great dip for tortilla chips, veggies, wraps etc.

The creaminess of this dressing comes from the avocado and a touch of oil, there is no mayo or dairy products in this dressing. If you prefer it a little thinner, just add a touch more water. Trust me you won’t compromise the flavor.

Not only is this avocado sauce delicious, it’s nutrient rich.  The avocado brings with it fibre, B vitamins, vitamin E, vitamin K, magnesium and potassium. It is not, however, low in calories, because avocados are high in fat. But don’t worry, we’re talking the good kind of fat, the kind you want in your diet. Monounsaturated fat like the kind in avocados, help absorb vitamins, reduce inflammation and promote healthy blood cholesterol levels. So, go ahead and enjoy this avocado sauce.

Avocado Dressing with Lime and Cilantro – Vegan

This avocado sauce is a delicious creamy sauce made with avocado, lime, cilantro and a flavorful combo of Southwestern spices. Dollop on top of salads, tacos or fajitas or use as a dip for veggies or tortilla chips.

Equipment

  • immersion blender

Ingredients

  • 1 avocado
  • 1/2 cup cilantro leaves & stems
  • 1 Tbsp canola oil
  • 1 clove garlic, minced
  • 1 1/2 Tbsp lime juice
  • 1/2 tsp cumin
  • 1/4 tsp salt
  • 1/8 tsp cayenne pepper
  • 1/8 tsp black pepper
  • 1 to 3 Tbsp water as desired

Instructions

  • Place all ingredients except water in blender or blending jar that comes with immersion blender.
  • Blend until smooth and creamy.
  • Add 1 tablespoon of water, blend and repeat as needed adding more water to reach desired consistency.
  • Taste and adjust seasoning – more spice? more salt? or just right?

Notes

Makes 1/2 cup – enough for 4-6 people to dip, dollop and enjoy.
Store extras in airtight container for 3-4 days in the fridge.

How to Blend it Best

You can make this recipe in a blender or an immersion blender. I love the immersion blender for this recipe because there’s not a large quantity and everything is soft enough that an immersion blender can easily handle the task. And of course, it’s so much easier to clean.

Can I Make Avocado Sauce Without Cilantro?

I get it, some people just don’t love cilantro. If that’s you, yes, you can make this sauce without the cilantro, you’ll still get plenty of flavor. If you’d like, you could try adding curly or flat leaf parsley or for a sharper flavor, consider adding some green onions.
