Fennel and Red Cabbage Coleslaw

The crisp, fresh texture of fennel makes an excellent addition to coleslaw.  The mild anise or licorice-like flavor adds interest and gives regular coleslaw a nice twist. In other words, try some fennel in your favorite coleslaw recipe, or if you’re looking for a new coleslaw recipe, try this red cabbage and fennel slaw.

Fennel and Red Cabbage Coleslaw

Time for a new coleslaw recipe? Fennel, red cabbage and orange are a pretty color combination and the mild licorice flavor from the fennel will be a pleasant change.

Ingredients

Salad

  • 1/4 head red cabbage sliced
  • 1 fennel bulb sliced
  • 1 carrot grated
  • 5 green onions chopped
  • 2-3 sprigs fennel fronds

Dressing

Instructions

  • In a salad bowl, mix red cabbage, fennel, carrots and green onions.
  • In a jar combine oil, vinegar, honey, salt and pepper.
  • Shake until well combined.
  • Mix dressing into vegetables.
  • Top with fennel fronds as garnish.

Notes

The cranberry orange infused vinegar is a mild, fruity flavored vinegar. Cider vinegar, white wine vinegar or other fruit flavored vinegar will also work.
Yield 4-6 side servings
