How to Roast Delicata Squash – A Tasty Winter Squash

Delicata squash is one of my favorite winter squashes. Have you tried it yet?

It’s a pretty, cylindrical squash with green/orange stripes that’s perfect for roasting.

Three Reasons Why I love Delicata Squash

1. It’s Super Tasty – Delicata is exactly what Goldilocks would want in a squash – not too dry, not to soggy – not too sweet, not too savoury, not too big and not too small. In other words, it’s JUST right. It has a mild slightly sweet flavor that’s perfect for dressing up in various spice combinations. Here are some spice ideas to get you started:

2. It has Pretty Edible Skin – The rind on the delicata is thin and tender so you can eat it. Yay! No peeling and no chewing through tough rind. And, it’s pretty!

3. It’s Easy to Work With – Delicata is perfectly sized. The smallest ones are great for one person and the largest works for four to six people. You can slice it in half lengthwise and stuff it, slice it in half moons or slice it in rounds.  All great for roasting or baking in the oven. While you could also puree it, I prefer using delicata squash where its pretty, tender skin gets to be displayed. Get your puree from squash like pie pumpkins, butternut, kabocha, buttercup, hubbard, etc.

How to Roast Delicata Squash

Delicata squash is a pretty squash that's easy to work with and has great flavor, especially when roasted. Eat roasted slices as is or use in salads or pasta dishes.
Prep : 10 minutes
Cook : 25 minutes
Total Time: 35 minutes
Servings: 2 people

Ingredients

  • 1 delicata squash
  • 1 Tbsp canola oil
  • 1 tsp salt
  • 1/2 tsp black pepper

Instructions

  • Preheat oven to 375°F.
  • Wash delicata squash well and towel dry.
  • For half moons – Cut delicata in half lengthwise. Scoop out seeds and cut into even slices 1/4 to 1/2" thick. See video for details.
    For rounds – Cut delicata into even slices 1/4 to 1/2 " thick. Scoop out seeds from each slice.
  • Place slices on a baking sheet and coat with canola oil all over.
  • Sprinkle with salt and pepper.
  • Place in oven and roast for 20 to 30 minutes until starting to caramelize.
  • Enjoy hot as a side dish or on pasta or let cool and use in salads.
