How to Make Rhubarb Simple Syrup for Mocktails and Cocktails
Learn how to make rhubarb simple syrup for the tastiest mocktails and cocktails this summer!

This recipe will make two cups or 500 ml of rhubarb simple syrup, enough for 8-10 cocktails or mocktails. The recipe can easily be doubled. Store it in the fridge for up to a week or in the freezer for months.
Rhubarb simple syrup is a great addition to the herb infused simple syrups I make over the summer.
Recipe for Rhubarb Simple Syrup
Rhubarb Simple Syrup
Ingredients
- 4 cups diced rhubarb fresh or frozen
- 1 cup water
- 1 cup granulated sugar
Instructions
- In large pot, bring rhubarb and 1 cup water to boil. Reduce heat and simmer for 10-15 minutes until rhubarb is soft and completely breaks apart.
- Pour mixture through a fine mesh strainer. Use the back of a spoon to squeeze out any remaining liquid.
- Measure strained juice and add enough water to equal 2 cups in total. If you use frozen rhubarb, you may not need to add extra water at all. If you have more than 2 cups liquid, add a little more sugar (ratio of 2 parts rhubarb juice to 1 part sugar).
- Return to pot and stir in sugar. Heat and stir to dissolve sugar, no need to boil,
- Remove from heat.
- Let cool and pour in clean jar or bottle. Seal and store in fridge for 1-2 weeks or freeze for longer storage.

How to Use Rhubarb Simple Syrup
Our favorite ways to use rhubarb simple syrup:
- When we don’t want to be fancy, we mix 1 part syrup with 3 parts club soda over ice.
- When we want to be fancy, but alcohol free, we make mocktails – see the three recipes below.
- When we want to be fancy with alcohol, we make cocktails – see suggestions below.
- When we don’t want a beverage, we use the syrup on top of ice cream or use it to sweeten oatmeal.
- It’s great on top of Rhubarb Bread Pudding which soaks it all in.
Three Mocktails Using Rhubarb Simple Syrup
Instructions per glass.
For the teens and adults that tested these recipes, the syrup added enough sweetness that club soda or sparkling water worked perfectly. If you love a really sweet drink, you could use lemon/lime pop instead.
To make rhubarb curls, use a vegetable peeler to peel long thin strips along the flat side of a rhubarb stem. Twirl and garnish.
Sparkling Rhubarb Pink Lemonade Mocktail
Ingredients
- ice
- 1/4 cup rhubarb simple syrup
- 1/4 cup pink lemonade
- club soda or sparkling water
Instructions
- Fill a short glass (rock glass or highball glass) with ice.
- Add 1/4 cup rhubarb simple syrup and 1/4 cup pink lemonade then top with sparkling water or club soda.
- Garnish with rhubarb ribbons and enjoy!

Rhubarb Mojito Mocktail
Ingredients
- ice
- 5-8 mint leaves
- 1/4 cup rhubarb simple syrup
- 1 Tbsp lime juice
- club soda or sparkling water
Instructions
- Place fresh mint in the bottom of a short tumbler.
- Muddle in the glass with the back of a spoon just to release flavors, be careful not to shred into tiny pieces.Top with ice.
- Pour in rhubarb simple syrup and lime juice.
- Top with club soda or sparkling water.
- Garnish with sprig of mint or slice of lime.

Rosemary Rhubarb Smash Mocktail
Ingredients
- 1 sprig rosemary, stripped
- 1/4 cup rhubarb simple syrup
- 1 Tbsp fresh lemon juice
- ice
- club soda or sparkling water
Instructions
- Gently muddle rosemary leaves, and rhubarb syrup in the bottom of a cocktail shaker.
- Add lemon juice and ice. Cover and shake vigorously for 10 seconds.
- Strain into a short tumbler of fresh ice.
- Top with sparkling water and stir to incorporate.
